1 tablespoon extra virgin olive oil
1½ cups of chopped yellow onion
2 garlic cloves, minced
1 teaspoon kosher salt, divided
1 teaspoon freshly ground black pepper, divided
1 teaspoon fresh thyme leaves
½ cup Worcestershire sauce
½ cup chicken broth or chicken stock
3 tablespoons catsup, divided
3 tablespoons brown sugar
3 tablespoons prepared mustard
1 3/4 pounds ground turkey
3/4 cup dry breadcrumbs
1 large egg, lightly beaten
1 large egg white, lightly beaten

Preheat oven to 350°.  Heat olive oil in medium skillet over medium heat. Add onion and cook, stirring frequently, until soft, about 5 minutes. Add garlic,  1/4 tsp. salt,  1/4 tsp. pepper,  and thyme; cook, stirring, one minute. Stir in Worcestershire sauce, broth, and 1 tablespoon catsup, brown sugar, and mustard; transfer mixture to a large bowl, and cool. Add the ground turkey, breadcrumbs, egg, egg white, and remaining ½ teaspoon salt and 1/4 teaspoon pepper to mixture in bowl, and mix well. The mixture will be super moist. Cover a baking sheet with aluminum foil, and coat lightly with cooking spray (I use PAM 100% Natural Olive Oil Cooking Spray). Form the turkey mixture into a loaf, and place on the pan. Brush the turkey meatloaf evenly with the remaining 2 tablespoons of catsup. Bake 1 hour or until a meat thermometer inserted into center registers at 170 F°.  Cooking Tip: A pan of hot water in the oven under the meatloaf will keep the top of the meatloaf from cracking. Makes 6 to 8 servings.
