3-4 pounds chicken parts ( ckn breast, thighs & legs recommended), skin-on,
bone-in, trimmed of excess fat, cut into chunks / bite-size pieces
2 Tbsp lemon zest
1/3 cup lemon juice
2 cloves garlic, crushed
2 Tbsp fresh chopped thyme (or 2 tps dried)
1 Tbsp fresh chopped rosemary (or 1 tps dried)
1 Tsp salt
1 teaspoon black pepper
2 tablespoons vegetable oil or non-stick pan or wok
1 tablespoon (a splash) white or rice wine vinegar
1/2 cup chicken broth or stock
1/2 cup) prepared lemon curd (This curd is a sweet lemon spread available in
most grocery stores)
1/4 cup hot water
2 scallions, thinly sliced or 20 blades fresh chives, finely chopped
Place lemon juice, lemon zest, garlic, thyme, rosemary, salt, and pepper in a
small bowl, whisk to combine. With the tip of a sharp knife, cut into each
chicken piece one or two times by about 1/2 an inch. (This will help the
marinade penetrate.) Place the chicken pieces and the marinade in a gallon-sized
freezer bag. Rotate the bag so that all chicken pieces are coated with the
marinade. Seal the bag and place in a bowl in the refrigerator (in case of
leakage). Let marinate for 2 to 3 hours.
Coat the chicken lightly in flour, seasoned with little bit more salt. Heat
a large skillet in veggie oil or a wok-shaped nonstick pan over high heat. Stir
fry the chicken until golden, about 5 minutes. Remove chicken from the pan and
return pan to heat. Reduce heat to medium.
Add a splash of vinegar to the pan and let it evaporate. Add stock or broth
to the pan and scrape up any drippings with a whisk. Thin curd by stirring in a
little hot water. Add lemon curd to broth and whisk to combine. Add chicken back
to the pan and simmer for 1 to 2 minutes to thicken sauce and finish cooking
chicken pieces through. Remove the pan from heat, add the scallions or chives
and more zest, and toss chicken pieces well to combine zest and scallions or
chives evenly throughout the sauce. Serves 6. Serve alone or with steamed rice (
include the lemon sauce ).
2 tbsp. of melted butter or margarine, unsalted
1/2 c. chopped almonds
1/2 c. flaked coconut
1 (18.5 oz.) pkg. lemon cake mix without the pudding
1 (8 oz.) carton of fresh sour cream
4 large eggs
1/4 cup water
1 tbsp. veggie oil
1 tbsp. lemon oil
1 tbsp. lemon extract
1 tsp. lemon extract
1 cup powdered confectioners' sugar, sifted
2 tbsp. lemon juice
Grease & flour a 10-in. bundt pan. Combine first three ingredients; then
spread evenly in bottom of pan. Set aside. Combine next 7 ingredients in a
large mixing bowl; beat 2 minutes on medium speed of an electric mixer.
Spoon batter into prepared pan; bake at 350° for 45 minutes or until a
wooden toothpick inserted in center comes out clean. Cool in pan for 10 min
then remove from pan and invert onto cake platter. Combine sugar and lemon
juice; drizzle over cake. Cool completely.
*Always use fresh lemons to make the curd as the bottled lemon juice is not
the best.

1 tablespoon grated lemon peel

Heat oven to 325°. Blend butter, 2 cups flour and 1/2 cup pwd.
confectioners' sugar. Pat into ungreased 13x9x2-inch pan. Bake for 20
minutes. For filling, blend together eggs, sugar, 4 tablespoons flour, lemon
juice, peel oil. Pour over first layer. Return to oven and bake at 325° for
20 min. Loosen around edges, cut into bars and sift the sugar over the top
while still warm.
